Persimmon is a golden sour ale that was aged in oak barrels with persimmon fruit from Twin Tykes Farms in Indiana. Soft notes of pear, lychee, and honey come from the combination of fresh persimmons wood aging. A touch of acid from our secondary, mixed-culture fermentation lends a cutting sour sting. This makes for a unique and pleasant brew we are pleased to offer thanks to our friends from Indiana!
