Most beers contain a small of residual sugar that cannot be fermented by regular beer yeast. Brut ales utilize a special enzyme that breaks down those sugars and makes them fermentable, resulting in a beer with little to no residual sugar. We added cherry and raspberry puree during fermentation a to produce a dry, crisp, slightly tart and highly carbonated, one of a kind ale that looks and tastes similar to a sparkling brut rose wine.
