This beer has been aged for over 21 months(!) in our inoculated oak casks. Prominent oak character in the nose sets the stage for a delicate floral aroma and taste on the palate. The brettanomyces(funk) immediately kicks in with “barnyard” notes, lending to a mild sour flavor, herbal notes and hints of lemongrass. Finishes clean and dry.
